Firstly, break the cauliflower into small flowers by hand. Boil water in a pot, add a spoonful of salt and a little cooking oil, blanch cauliflower and fungus for 1 minute, and then remove.
Next, mix the sauce and add an appropriate amount of oyster sauce, a little salt, chicken essence, white sugar, soy sauce, and water starch to a bowl. Stir well and set aside for later use.
After the oil in the pot is hot, add scallions and garlic and stir fry until fragrant. Pour in tomatoes and stir fry until the sauce is formed. Then add cauliflower and fungus and stir fry over high heat for a few times. Drizzle in the prepared sauce, and finally add a handful of green garlic leaves. Stir fry evenly before serving.
