Method 1: Classic Dry Pot Chicken

Required ingredients:
500g chicken (chicken leg or breast)
Appropriate amounts of green and red chili peppers
One onion
Moderate amount of ginger and garlic
Moderate amount of Sichuan peppercorns and dried chili peppers
Cooking wine, soy sauce, salt, sugar, chicken essence, pepper powder, cumin powder in moderation
Moderate amount of edible oil
Method steps:
Wash the chicken and cut it into small pieces. Add cooking wine, soy sauce, salt, pepper, and a small amount of starch, stir well, and marinate for 15-20 minutes.
Peel and cut potatoes into strips, chop onions into pieces, chop green and red peppers into pieces, chop ginger and garlic into small pieces, and cut dried chili peppers into sections for later use.
Pour an appropriate amount of cooking oil into the pot, heat it to 60% hot, add potato chips and fry until golden brown, remove and drain the oil for later use.
